Cinnamon Walnuts

1 egg white
1 tbsp water
1/2 cup granulated sugar
3/4 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
4 cups walnuts, halves or pieces

Preheat over to 300°F and grease a baking sheet.  In medium shallow bowl, beat egg white and water until foamy.  Mix together sugar, cinnamon, nutmeg and salt in a large bowl.  Combine nuts and egg white mixture.  Stir to coat.  Remove with a slotted spoon and place in the cinnamon/sugar mixture.  Stir to coat completely.  Place on the baking sheet in single layer (as much as possible).  Bake for about 1 hour, stirring nuts occasionally to allow even baking.  Remove from oven and allow to cool.  Place in festive jar, tie with raffia ribbon and add gift card.  Makes about 4 cups of walnuts.
